Regular, but out of the ordinary Mac & Chez
Ingredients: (one prsn)
-Generous amount of macaroni, can be substituted for other small pastas. However much you want.
-Approx. 3 pinches of fresh thyme
-Various cheeses (best would be Mozzarella, or cheddar)
- A tiny amount of Chipotle (1 tiny pinch, add more if you want, but chipotle IS strong)
Procedure:
Set a small pot of water (depending on how much pasta you chose) on the stove at HIGH heat, with a pinch of salt, and set to boil. Once boiled, dump in your pasta, set at med-high heat for 5 1/2 to 8 mins. Chop your 3 pinches of thyme into about half original "leaf" size while pasta is boiling. Continually stir throughout. Get milk, butter, and your cheese out. When pasta is at desired cooked level, drain. Put back in pot, now without water, and set to med heat. Stir in a small "slirp" of milk. For more creamy taste, add less milk, and a little more butter. Add 1-2 tbsp of butter. Stir in. Then add your cheese to your pasta, melt in, stir, distribute the cheese all around. Add your chipotle, then your rosemary (sprinkle around). Stir around. When you think it is finished, distribute on a plate, maybe finish it off with a nice basil leaf.
Additions:
You can add lobster for that gourmet feeling among a regular dish. Add many cheeses and a teaspoon of dijon mustard for a much richer taste. For that "glam" look, serve in a martini glass!
